Gulf view dining at Camille’s Crystal Beach Restaurant

Vacationing at The Cove, our vacation home getaway in Destin (FL), we love it that we’re walking distance to nearly a dozen restaurants. Tonight we walked down the beach boulevard to Camille’s Crysal Beach Restaurant for Gulf front sunset dining. We timed our dinner and walk to enjoy the sunset enroute to the restaurant which opened shortly thereafter. 


Camille’s at Crystal Beach is located on the Scenic 98 beachfront highway at Crystal Beach, down the street from our community/enclave. Camille’s is upstairs above Camille’s Cafe located on the ground level, a popular trendy gathering place that offers coffee, breakfast, lunch and cocktails and features popular live music on the sidewalk opposite the beach walk


Founded in 2003 by Charles Morgan, Camille’s at Crystal Beach was named after Morgan’s grandmother and mother, referred to as Big Camille and Little Camille, respectively, two women who made a great impact on him. 

Camille’s is a sister restaurant to Harbor Docks Seafood Market that sources the freshest possible Gulf seafood that is caught in local waters by local fisherman and unloaded right on the dock, to a dozen local restaurants, ensuring a ‘Gulf to Table’ experience. The Catch of the Day is served blackened, grilled or fried. 

Besides the local fresh catch, they’re known for their sushi prepared by Executive Sushi Chef Yoshie Eddings who is well known internationally as having catered to an A-list celebrity clientele. Eddings trains all of the sushi staff at Camille’s and at the sister restaurant locations, maintaining the highest quality and standards possible to ensure that each bite will be the freshest and most delectable possible. 

We dined on the small outside veranda that overlooks the beach rode and Gulf beach opposite, at sunset for a colorful dusk sky. 




As a starter we shared the house salad which we delicious - mixed greens, grape tomatoes, figs, roasted pecans, bacon, goat cheese, house croutons, creamy vinaigrette.

Tonight, the daily fresh catch was Grouper or Red Snapper. We ordered for our main course from the menu the regular feature, Macadamia Nut Encrusted Snapper with blood orange cream, butternut squash medley, bacon & toasted coconut risotto. It was delicious. 


Additionally, we ordered the Jumbo Lump Crabcakes which were a bit disappointing seeming less than fresh or slightly fishy.


With dinner we ordered to two WBTG - Wines By The Glass, from the modest and limited wine list two glasses, a Chardonnay and a Sauvignon Blanc. 

Raeburn Russian River Valley Chardonnay 2021 

Raeburn Winery hails from the Russian River Valley in west Sonoma County. Its name originates from Olde English meaning the stream where one drinks - apropos for a wine crafted in this unique watershed which provides habitat for grapes and creatures alike. “A fitting nod to those who prefer to slow down to observe, appreciate and flourish in nature’s surroundings,” says Derek Benham, owner. 

Raeburn Wines are the handiwork of owner/winemaker Derek Benham, inspired by his mother, Phyllis Benham, who preached to “appreciate nature’s gifts, but ‘to leave well enough alone’”. Benham takes that approach when making wine, a task made easier because he selects grapes from Sonoma County’s finest vineyards and carefully crafts wines. “Rather than engineer, we guide the grapes toward the best version of themselves.”

This cool, marine-influenced region is perfectly suited to exceptionally flavored Chardonnay. Fresh layers of green apple, and pear are accented by a creamy richness due to sur lie aging. A glass of Raeburn Chardonnay is the start to a beautiful friendship. - Derek Benham, Owner.. 

Raeburn produce Sonoma County AVA wines but source grapes not only from the Russian River Valley, but also Monterey, Sonoma County, Alexander Valley, Sonoma Carneros, Dry Creek Valley and small amounts from Lodi and San Benito County.

This Raeburn Russian River Valley Chardonnay was crafted from our winemaker’s favorite vineyard lots in the Russian River Valley and aged for 11 months in a combination of French, American and Hungarian oak barrels; the result is a supremely structured and flavorful wine that offers an elevated expression of Raeburn Russian River Valley Chardonnay.

Winemaker notes - “Raeburn Rassian River Valley Chardonnay is a nod to classic California Chardonnay—elegant and expressive with bright fruit character, creaminess and toasty vanilla.”

It was rate 89 points by Wine Spectator. 175,000 cases were made

Golden straw colored, light medium bodied, peach and citrus flavors with notes of mango and vanilla on a tangy finish. 

RM 88 points. 



Black Cottage New Zealand Sauvignon Blanc 2022

Black Cottage estate and vineyards are situated along the Marlborough’s Ōpaoa River, owned by founder Dave Clouston and crafted by Winemaker Sanna Stander. They produce sustainable New Zealand wines sourced from select parcels from Marlborough, Central Otago and Hawke’s Bay. Their portfolio offers moderately priced Chardonnay, Sauvignon Blanc, Pinot Gris whites, Pinot Noir, Syrah and Merlot reds, and a Rose’.

This Sauvignon Blanc is sourced from the New Zealand Wairau & Awatere valleys.

Producer’s notes - “This year’s vintage is one of the finest in the last ten years. A cool summer allowed the grapes to ripen gently and evenly and show concentrated and distinctive flavours, The nature of this season allowed for optimal picking decisions. Our Sauvignon Blanc is vibrant and expressive in character, with refreshing acidity and a refined structure on the palate. We achieve maximum fruit purity and varietal character through cool fermentation in stainless steel tanks, aged on lees for 2 months to add texture and complexity.’

Producer’s Tasting notes: “Pale straw in colour, this sauvignon blanc has a complex nose of paw paw, passionfruit, pineapple and a touch of cut grass and crushed herbs. The juicy palate is packed full of tropical fruits and lime zest with a hint of sweet pea and crunchy red capsicum. Good balance and refreshing acidity complete this expressive wine.”

Light straw colored, light bodied, crisp acidity highlights zesty citrus and stone fruits.

Red Flight Soars High - Silverado Solo, Darioush, Château Faugères

Readers of this blog see many instances of our wine encounters with enticing wines, so its significant when wine buddy Bill says we may have outdone ourselves - tonight's wine dinner with Bill and Beth C was extraordinary in the pairings of great wines and food.Our rib-eye roast dinner wine flight served up three blockbuster reds that showcased different but complementary styles.

The evening featured Château Faugères St Emilion Grand Cru, Darioush Napa Valley Cabernet Sauvignon and Silverado Vineyards SOLO Napa Valley Cabernet Sauivignon over dinner. A starter course of lobster medallions was highlighted by Te Kairanga Casarina  Martinborough New Zealand Reserve Chardonnay. The evening finished with Warre's Quinta da Cavadhina Vintage Porto with the desert course.


The evening started with artisan cheeses (shown above with wine flight) - Stilton with berrys, white cheddar and danish blue, served with fresh berries and mixed nuts. Broiled lobster medallions with drawn butter followed.

The dinner featured a rib-eye roast served with grilled mushrooms, twice baked potatoes and fresh garden salad.

Desert featured Linda's baked apple and berry pie with apples, blueberrys and strawberries served alongside artisan hand-made chocolate truffles from The Chocolate Garden, a holiday gift from colleague Lora J.


Château Faugères St Emilion Grand Cru 1998

Following our attendance at the UGCB grand tasting grand tasting of the 2010 vintage release in Chicago this week, I was compelled to open with a vintage Bordeaux selection.

Decanted an hour before drinking, medium to full bodied, inky purple color, subdued nose but complex medley of flavors evolved throughout the evening - predominate black fruits, layer of graphite with tones of cedar, mushroom and leather with hints of anise and mocha. After ninety minutes a slightly funky barnyard tone set in but eventually burned off leaving a pleasant, complex but polished tone with nicely integrated firm tannins on the moderate finish.

 Darioush Napa Valley Cabernet Sauvignon 2001

 This was a fitting selection for this evening. We first were introduced to this wine by Bill and Beth when we were invited by them to a wine dinner at their Cress Creek Country Club in the late nineties.

We visited the winery during our Napa Valley Wine Experience in 2003. Their fabulous winery and tasting facility on Silverado Trail in southern Napa Valley was not yet open but was well under construction at that timeTonight's wine selection was from the case we purchased during that visit.  

We then attended the gala Darioush - Domaine de Chevalier Gala Wine Dinner. This was a fabulous private dinner hosted by Darius & Shaptar Kaledi of Darioush Winery and Bernard Laborie of Domaine de Chevalier at Everest restaurant in Chicago in the summer of 2004. 

I mention this since we just saw Bernard at the UGCB grand tasting of the 2010 Bordeaux release in Chicago this week and we reminisced about that evening. See my UGCB blogpost of that evening.

This remains a blockbuster wine, living up to the tone set by the large oversize, almost magnum size bottle - dark inky color, full bodied, complex but smooth and polished, full forward black berry and currant fruits with a layer of spicy cinnamon oak with tones of black tea, anise, tobacco leaf and dark chocolate - well balanced and polished with nicely integrated silky smooth tannins on the lingering finish.

Blend of 84% Cabernet Sauvignon, 10% Merlot, 2% Cabernet Franc, 2% Malbec, 2% Petit Verdot

Silverado Vineyards SOLO Napa Valley Cabernet Sauivignon 2006


Bill brought this cellar selection from home which set the stage with this Stag's Leap District Napa Cab for me to select the 'neighboring' Darioush Cabernet. Its hard to imagine the Darioush being upstaged but this flagship of the Silverado family is a huge blockbuster wine. It was a treat to experience this wine for the first time.

Dark inky purple, huge, powerful, complex forward black berry fruits accented by spicy toasty oak, leather and pencil lead on a tight firm lingering tannin finish.

 I can't wait to try this again and can imagine this wine after five or even ten years being more smooth and polished but still retaining that firm powerful core and long tannin finish.

This was a great transition progression, building 'up' from the Faugueres and then the Darioush. This wine begged for hearty cheese, dark chocolate, or charbroiled beefsteak.

Te Kairanga Casarina  Martinborough New Zealand Reserve Chardonnay 2005

Regrettably, this was the last bottle of this partial case I bought a while back.

Light golden honey coloured wine - medium-light bodied. Winemaker notes say it well - Hints of white peach, citrus and grilled hazelnuts with attractive vanilla oak characters. Nice easy drinking wine - tight acidity and good length.to add a bit more body, richness  Since the earlier tastings, I sense this added a bit more body and complexity and actually possessed somewhat of a buttery oakiness resembling a Sonoma County style. Very nice and perfect complement to the lobster medallions and salad.

Warre's Quinta da Cavadhina Vintage Porto 1995


Dark coffee color - full bodied, a bit of an edge of sweet black fruits, layer of smokey creosote with hint of cedar and cassis and black cherry on the finish.

Garnet colored with a slight rust tinge, light bodied, easy drinking, touch of spice, dark red berry gives way to slightly earthy leather, layer of alcohol and acid on a slightly tart spicy moderate tannin finish. Decent value for under $15.

March Madness Eclectic Mix of B-Ball and Wine Tasting

Get-together to watch March Madness NCAA B-Ball and Taste Some Wine

Like the NCAA tourney, an eclectic mix not normally seen together - some were big and powerful, some were legends, some unknowns, some over-achievers, and a cinderella.




2007 cc: Napa Valley Cabernet Sauvignon

Second time tasted and consistent notes - a bit tart and hard on initial opening - much softer and more approachable the next day. Full bodied - dark garnet color. Complex, slightly restrained blackberry fruits, spice, layer of cassis, hint of cedar with tones of mocha on a full lingering soft tannin finish.
RM 91 points.





  

Muddy Water Waipara, New Zealand Pinot Noir 2008

Ruby-colored, light medium bodied, bright forward medley of sweet tangy fruits - cherry, wild strawberry, plum, spice and dusty rose flavours with soft silky tannin on a short finish.

Marquis Philips Southeast Australia Shiraz 2000
 
In a blind tasting this would pass as a southern Rhone - Aromas and taste of firm forward rich very ripe black raspberry, almost raisin and fig give way to intense pepper and anise finish.

Piedra Hill Vineyard Howell Mountain Cabernet Sauvignon 2004

Dark garnet color - medium-full bodied. Full forward ripe black fruits - black berry, black cherry, almost raisiny, hints of anise and a layer of spice on a full firm lingering tannin finish.
RM 89 points.


 

Pope Valley Winery Napa Valley Eakle Ranch Merlot 2005

From the base of the rear of Howell Mountain. Medium bodied - dark garnet color - black licorice, anise, leather and a hint of smoke overtake the black berry and black cherry fruits and spice. RM 86 points.


Interesting selection brought by Bill & Beth - namesake to Beth's Pope family heritage with a connection in her past somewhere. Notably, she also was championing the support for the Kentucky Wildcats who advanced to the Final Four over Bill's favored North Carolina Tar Heels.

Linda and I, and Bob are all supporting our Hoosier heritage favorite Butler Bulldogs with Gloria lending encouraging support to keep family unity. Onward!
