Paradigm Napa Valley Oakville Estate Cabernet Sauvignon 2002

As we enter week three of the bizarro world COVID19 shut-in, our tour and enjoyment of our wine cellar investment continues. Tonight, with Sunday night left-overs and a selection of artisan cheeses, berries and assorted nuts, we pulled this Napa Valley Oakville Cabernet.  

We visited the Harris' Paradigm Oakville winery during our Napa Valley Wine Experience back in 1999. We still hold more than a case from a half dozen vintages of this label dating back to the mid-nineties.

As shown on the special label affixed to the bottle, this bottle was acquired at the Napa Valley wine auction, not directly from the producer.

This label was last tasted two years ago in a comparison tasting with two other Napa Cabs. At that time I wrote, "Perhaps an unfair comparative tasting of three diverse Napa cabs, the Paradigm was slightly narrower and single dimensional compared the mountain fruit and complexity of the Bordeaux blends. It was delicious never-the-less and a top performing Napa Cab."

Tonight, this was enjoyable standalone and ideal for the occasion. Tasting notes were consistent with earlier, last published note. At eighteen years of age, this is holding well and not showing diminution from aging, but certainly not likely to improve any further.

This is labeled 'Estate Bottled', meaning all the grapes were sourced from producer owned vineyards on the property. 

This was dark garnet colored, medium-full bodied, bright tangy black cherry and black berry fruits accented by notes of anise, tea, spice box and hints of dark mocha, caramel, and leather.

Paradigm 1995 Oakville Cab

My overseas flight arrangements were disrupted and rescheduled so I had four hours to chill before heading back to the airport. I pulled from the cellar a half bottle 'split' of this aged Paradigm Napa Cab to enjoy with some artisan cheese and biscuits. Its convenient to keep on hand 375ml half bottles for occasions where a couple of glasses suffices and opening a full bottle is too much.

We tasted and acquired this wine during our Napa Valley Wine Experience visit to the Estate back in 1999. I last wrote in these pages abour Paradigm and our visit in March of this year.

In 2010 I tasted this release and wrote: "Fragrant, soft supple tannin, medium body, the layers of cherry and black currant fruit are being overtaken by earthy leather, licorice, and herbs, with under-currants of spice and cedar."

Three years later, my last notation on this release, I wrote I had consistent tasting experience.

Five years later, at 24 years of age, this wine is showing its age and is in the last phase of its acceptable drinking window.

Tonight, the color is starting to give way taking on a faint and subtle but apparent rust brown tinge. The nose is beginning to take on a slight barnyard dry grass funk, and the fruits are starting to give way further to non fruit notes of earth, smoke, creosote, and leather, with the still apparent notes of licorice, spice and cedar. This was tasted from a 375ml half bottle which may have contributed to the diminution from aging, as smaller bottles age less well than larger format bottles.

Home, Friday night after an incredibly busy and hectic week, I was looking forward to relaxing with a nice glass of wine. Mindful of cellar management, to open an older bottle late, approaching, or even past it's drinking window, lest it deteriorate or diminish for future enjoyment, I pulled this 1996 Napa Valley Merlot from Paradigm.

We tasted and acquired this wine during a visit to the Paradigm Estate and vineyards with proprietors Ren and Marilyn Harris during our Napa Valley Wine Experience back in 1999. Ren and Marilyn had owned and operated various properties in Napa Valley since 1964 and purchased the Paradigm property in 1975. The '91 release was the inaugural vintage for Paradigm.

The fifty-five acre property lies in the Oakville appellation and consists of fifty acres of vineyards planted in Bordeaux varietals - Cabernet Sauvignon and Merlot from the beginning, with  Cabernet Franc and Petit Verdot being added a few years later.
 
We still hold nearly a case of the Paradigm Cabernets we acquired at that time.  We held a mini vertical (series of vintages of the same label) spanning vintages from 1991 up to 2004. We've consumed all our vintages from 1991 thru 1994 but still hold nearly a decade of vintages.

Paradigm wines are all Estate bottled, meaning all the grapes are sourced from their fifty acres of vineyards there on the property. The Paradigm winemaker is the legendary Heidi Barrett who has been there since the beginning.

Tonight, we opted for this Merlot for slightly more casual sipping. We enjoyed this with a selection of artisan cheeses including the remains of the vintage aged 21 year old sharp cheddar from our OTBN tasting a couple weeks ago, and some marinated beef roast which was an ideal pairing combination.

This is still drinking nicely at twenty two years, starting to show it age with only slight diminution, but past its prime and so time to starting consuming whats left in the cellar over the next couple of years. The cork was in fine condition but darkening to a tobacco color, there was ever-so-slight rust tinge color on the rim, and the fruits were starting to give way a bit to non-fruit tones of leather and tobacco. It was still very enjoyable and holding its own nicely.

Garnet colored with the slight rust hue, medium bodied, blackberry flavors with tones of cherry and currant fruits, accents of tobacco, leather and a hint of spice turning to floral accents on a lingering smooth tannin finish.

A wine adventure, we held a 'boy's night' Father-son (s) wine dinner. What a treat and joy to do so with all three sons in attendance. With son Sean just home from the hospital after some major stuff, now on the mend, sibling Alec came in from New York, and brother/son Ryan came over for the gathering. It was Ryan's birthday last week so we ventured down to the cellar to pull a 'birth-year' wine from the few remaining in the collection for his vintage.

We discussed the possibility of doing a 'vertical' tasting, a wine from the same label from each of their birth years. It would be possible from our cellar collection but only in larger format Magnums, obviously too much for as intimate small group tasting as it was. Notably, at some point we could, and need to do a tasting of all the kids birthyears as we have in our collection one from each, magnums of Silver Oak, Chateau Palmer and Gruaud Larose.

For the 1982 vintage we found a time-to-drink Chateau Gloria St Julien. For a near '85 we pulled a 1986 Chateau Clerc Milon Pauillac. We should've pulled a '90 vintage for son Alec's birthyear but opted to stick to just the two bottles. Notably, too, remarkably, or perhaps shamefully, our cellar records show we hold more than 180 bottles in no less than 65 different labels from that vintage! Need a party or special occasion! (I am certain this number is exaggerated and doesn't reflect earlier consumption and numerous bottles 'thinned' and liquidated from the cellar at auctions when their market price points peaked during the last decade.) 

Eventually in a quest for something 'younger', we pulled a Paradigm Napa Oakville Cabernet Sauvignon from the 1994 vintage.

Later after I (Dad) went to bed, the boys pulled and tasted one of our favorite Syrah's, Kilikanoon Oracle Shiraz 2005. Half of that bottle remains that we'll enjoy with tonight's dinner.

The cork on this bottle was a challenge as it was saturated and soft but initially intact. ryan used an Ahso (two pronged puller) to extract it and the bottom tip of the extended extra long cork eventually separated and remained deep in the neck. I was able to extract it using a traditional corkscrew, inserting it into the edge between the bottle and the cork and gently wedging it out.

We decanted and aerated the bottle. It was initially closed but opened after about ninety minutes. Initial indications suggested the bottle might be tainted or over the hill, somewhat murky with a brownish rust colored tinge on the dark garnet color. While it never cleared, the cherry and currant fruits revealed themselves and by the time the grilled strip steaks were ready, this was consumable, albeit past its drinking window and just hanging on for remaining drinking life. The fruits had given way to leather, black olive and earth tones. It was a worthwhile and acceptable complement to the steak, baked potato grilled asperagus.

For some reason, this was offensive and repulsive, conflicting with the chocolate silk pie. So be it.

While it was never an expensive or long lived collectable bottle, the fact we found one lurking in the cellar was fun and it contributed to the wine dinner experience. For what its worth, we didn't even have this bottle in our cellar records. We found it searching for another bottle.

Chateau Clerc Milon Pauillac 1986

At 32 years this is outside its prescribed drinking window, past its prime but still approachable, remarkably holding its own, but time to drink up. Back in 2002 Parker wrote that "while this wine should age well for another two decades, it has matured faster than many of the 1986 Pauillacs".

The cork started to collapse as soon as I pressed on it but I was able to work it out, slowly rocking the 'Ahso' (two prong cork puller) between opposite sides to extract it fully. It was soft and saturated but intact.

Note the original price still affixed to the bottle, $32.99 on release back in 1989, on sale for $29.99. The pricetag tells me I obtained this at the old legendary Sam's in Chicago.

Decanted and aerated but needed a couple hours to open up, dark garnet colored, medium bodied, plum and cherry fruits initially subdued and overshadowed by leather and black olive, eventually popping with some bright vibrancy with tones of cedar and spicy clove with hints of bacon fat, pepper and anise, turning to some modest tannins on the short finish. This is a blend of 75% Cabernet Sauvignon, 15% Merlot and 10% Cabernet Franc.

On release this got 97 points from Wine Spectator in 1989 and was Ranked #2 on the Top 100 Wines of 1989. Robert Parker gave it 90 points and Jancis Robinson gave it 17.5/20 points. I gave it 88 which is remarkable at this late stage of life.

We tasted and acquired this wine during our visit to the winery during our Napa Wine Experience 1999. This was the or close to the inaugural vintage of this wine and is the last of the bottles we hold in our cellar of this vintage label.

This is showing remarkably well at 24 years of age showing no signs of diminution. This may be at its apex of drinkability and will no doubt not improve with further aging. But there should be no rush to consume these either. We acquired a case of this wine upon release and the remaining bottles are in perfect condition with corks and fill levels still being optimal.

Tonight was consistent with my last tasting of this vintage label date back to 8/30/2009 when I posted this. "Dark inky color. forward fruit flavors of black cherry, with a bit with earth and leather emerging over the subtle currant, ripe plum, cedar and a hint of anise on a moderate finish."

Kilikanoon Oracle Claire Valley Shiraz 2005

The boys opened this after I went to bed but left me some which we enjoyed the next evening.  I am finding these aged Aussie Shiraz's hold up for several days and may be better the day after or the day after that!

This is one of our favorite Shiraz's in our cellar collection. Shiraz is the second highest volume varietal in number of bottles in our collection after Bordeaux varietals (which includes Cabernets (Sauvignon and Franc), Merlot, and the 'lesser' varietals Cabernet Franc, Petit Verdot and Malbec.

Our collection of Syrahs aka Shiraz', represent Australia, Washington State, California and the French Rhone River Valley, upper and lower.

This producer, Kilikanoon was awarded Australian Wine Producer of the Year by the International Wine and Spirit Competition (IWSC) for the fifth time in eight years that Kilikanoon was internationally recognised as Australian Winery of the Year, (previously by James Halliday in 2013 and Germany’s Mundus Vini in 2010, 2017 and 2018).

This Kilikanoon Oracle Shiraz 2005 was awarded best Shiraz in the World at the International Wine Challenge, one of three times to be so recognized, in 2001 and the 2014 Oracle Shiraz was awarded the Shiraz Trophy for best Shiraz in the world. 

Oracle is composed from select old vine fruit grown along the estate-owned Golden Hillside Vineyard in Leasingham in the Clare Valley in South Central Australia. Oracle was the first Shiraz released by Kilikanoon’s Founder and Chief Winemaker Kevin Mitchell in the inaugural 1997 vintage and has been released each year except 2011.

This 2005 was consistent with earlier tasting notes back in May and previous last entry back in 2009 when this wine was only five years old. Now three times that age, it still presents the massive blackberry liqueur accented by full bodied blueberry, notes of kirsch, expresso and hints of cinnamon and clove spices.

Dark blackish garnet colored with full body and fine grained approachable well integrated tannins on the long lingering finish. Over the years since the earlier tasting, the berry fruits are starting to give way to a notes of raisin and hints of leather.

Trio of Napa Cabs reflect diverse terrior and styles

We hosted a dinner to welcome former client and friend Mike Z and wife Tammy to Chicagoland. Linda grilled ribeye steaks served with brussel sprouts and delicious Chantilly potatoes.

Tammy brought a mixed green salad, and we finished with Linda's chocolate mousse and homemade almond profiteroles, with fresh berries and a selection of assorted chocolates.

Prior to dinner we had a broad selection of artisan cheeses.


 We toured our just finished rebuilt wine cellar and pulled a trio of Napa Valley Cabernets that reflect three appellations and their diverse terroir and styles; Elan Vineyards from Atlas Peak, Paradigm from Oakville, and Constant from Diamond Mountain.

I had initially pulled two 2002 vintage bottles and Mike and Tammy pulled a '94 vintage Elan for their son's birthyear. We also pulled a 2002 vintage Suduiraut Sauterne dessert wine.


Elan Vineyards Napa Valley Atlas Peak Cabernet Sauvignon 1994

We discovered and acquired this wine during a visit to the Monticello Winery where it was produced back in the mid-nineties.

Consistent with earlier tasting notes, this tasted remarkably like a vintage Bordeaux with huge floral scents, earthy leather, black fruits, smoke and black cherry with hints of anise and cedar. This wine originally tasted at the winery with producer Richard Elliott-Smith and his lovely wife Linda was true to his Bordeaux roots in flavor, character and apparent age-worthiness as this seventeen year old (now at twenty-four) is holding well and revealing itself more profoundly than earlier tastings.

Now at twenty four years, this is still holding and drinking well, it is showing its age as the berry fruits are giving way to notes of black olive and green pepper.

Constant Diamond Mountain Vineyard Cabernet Sauvignon 2002


We visited Constant Diamond Mountain Vineyards during our Napa Valley Wine Experience in 2011. We hold a half dozen vintages of their mountain grown Cabernet and this 2002 vintage release is the best I have tasted to date.

The backbone foundation for this wine release is predominantly Constant Diamond Mountain Cabernet Sauvignon from their mountain top vineyards sitting at 2000 foot elevation high atop the Mountain with views of Sonoma Valley to the West and Napa Valley to east. it is one of the oldest history wine properties in the region dating back to the 1880's and is one of the very few properties that span both sides of the summit.

The mountain fruit is firmly structured with big but approachable tannins. The 2002 release is a Bordeaux style blend  of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot.

This was dark garnet colored, medium full bodied, complex and fruit forward yet elegantly balanced and nicely polished with a symphony of flavors: ripe black currant and black berry fruits with exotic spices, notes of licorice, hints of sweet mocha tobacco leaf and leather.

With the chocolate mousse and fresh berries dessert we opened this perfectly accompaniment, Suiduraut 2002.

Château Suduiraut 1er Grand Cru Classe' Sauternes Bordeaux 2002

Its great fun to watch these Sauternes wines age and turn from the straw color on release, darkening over time to butter, then honey colored to weak tea colored.

Dark honey colored, medium full bodied, not as sweet and unctuous as some vintages, the fruit is more subdued lacking the apricot nectar and honey of some vintages. This showed plenty of botrytis, with predominate notes of smoke accented by marzipan, almond, ripe apple, and hints of  vanilla on the tongue cloying finish. This was a perfect compliment to the fresh berries, homemade profiteroles and chocolate mousse.

For a midweek grilled steak dinner we pulled from the cellar this aged 1994 vintage Napa Cabernet from Paradigm Winery in Oakville.

At 24 years of age, this was showing remarkably well showing no signs of diminution. This may be at its apex of drinkability and will no doubt not improve with further aging. But there should be no rush to consume these either. We acquired a case of this wine upon release and the remaining bottles are in perfect condition with corks and fill levels still being optimal. This is further reinforcement of our cellar conditions being ideal for long term aging of suitable wines.

We acquired this case when we visited the winery and met producers Ren and Marilyn Harris during Napa Wine Experience back in 1999.

Today, Paradigm is crafted by legendary winemaker Heidi Barrett. Below are her notes on the most recent 2013 release which resembles this vintage release.  Note her comments on this label being age worthy. Tonight's tasting is further testimony to that claim.

Winemaker, Heidi Barrett's Notes for the most recent release: "Another great vintage with the 2013 for Napa Valley Cab! Dark ruby red color with aromas of sweet, toasty oak, cedar, ripe black cherry, currants and spice. Absolutely delicious across the palate. Flavors are big and mouth coating yet so well balanced and silky across the palate. Dense chewy refined tannins in the mid palate with great length and persistent flavors. This is a beauty that will be delicious at release but is also age worthy. Enjoy!" 

Tonight was consistent with my last tasting of this vintage label date back to 8/30/2009 when I posed this. "Dark inky color. forward fruit flavors of black cherry, with a bit with earth and leather emerging over the subtle currant, ripe plum, cedar and a hint of anise on a moderate finish. RM -  89 Points"

I would give it 91 points at this stage as it is showing quite nicely.

For a spontaneous dinner on the patio at our neighborhood trattoria Angeli's Italian with friends Bill and Beth, I took BYOB two vintage 1996 Napa reds - Paradigm Oakville Cabernet and Liparita Howell Mountain Merlot. Bill brought a bruising Barolo that showed its muscle as a complement to the Italian sausage and pasta. This was an interesting contrast in new world and old world varietals as well as a nine year old vs eighteen year olds that one might think are nearing the end of their years.

We still hold almost a case of Paradigm Cabernet from several mid-nineties vintages so I am tracking their aging and drinkability with interest.

We visited Paradigm during our Napa Wine Experience back in 1999. I recall tasting the Liparita from barrel at the Oakville custom crush facility with then winemkaer Gove Celia during our Napa visit back in 1998. Both of these wines are showing their age, probably beyond their apex, or any chance for improvement, but still within their drinking window. Both show some diminution of fruit, giving way to non-fruit charcoal and earth tones. Yet, each revealed some of its native fruit character at some point during the evening.


Liparita Napa Valley Howell Mountain Merlot 1996


We know that to bear the Howell Mountain appellation that the fruit for this wine had to be sourced from vineyards above 1200 foot elevation, the level of the normal fog line. I don't recall, or perhaps never knew the source. This '96 surprisingly showed bright and vibrant red berry fruit after being open for about an hour.  As written in this blog, we tasted this wine from a magnum from our cellar last year and those notes indicated more stable and complexity in the fruit - another indicator of the enhanced aging of wine in a larger format bottle such as a magnum.

Notes from magnum tasting - Dark garnet colored - medium-full bodied - black cherry, black berry fruits still holding for this seventeen year old - perhaps aided by larger format magnum, tones of cedar, spicy oak, subtle leather and earth - moderate smooth well integrated tannins on a lingering finish. $66 at Dean & Deluca in Napa (upon release)

(Then) RM 89 points. Tonight this wine rated 88 points due to the slight diminution of fruit as noted above.

The current Liparita label is under different ownership from the label around the milenium. 

Paradigm Napa Valley Oakville Cabernet Sauvignon 1996

Despite having a case of this wine in various vintages from this era, my only record of tasting this wine was during our Napa visit back in 1999. This was our last bottle from 1996, the remaining bottles are from 1994, 1995, and 2001-02. Ren & Marilyn Harris have owned the property since the eighties, producing wine under the Paradigm label since 1991. Today the winemaker for Paradigm is the legendary Heidi Barrett.

I opened, decanted and then rebottled and recorked this wine an hour before setting out for the restaurant. Upon decanting it released huge aroma's of berry fruits and some floral. After opening for serving the fruit was a bit muted for almost an hour before revealing black berry, black cherry and hints of sweet black raspberry, giving way to a layer of charcoal, anise and spice. Tannins were moderate on the lingering finish. This wine is still showing okay but should be consumed over the next few years.

Franco Molino Barolo Villero Riserva Nebbiolo 2005

From a country with a mind-boggling 600 different grape varietals, one of the better known and more popular is Nebbiolo which produces lightly-colored red wines which can be highly tannic in youth with scents of tar and roses, that soften and become more approachable with some age. Nebbiolo grapes are characteristically found in red wines from the Barolo DOCG (Denominazione di Origine Controllata e Garantita) or appellation in the northern Italian region of Piedmont.

Bill's tasting notes from Cellartracker - "Big, bold and fruit forward. Took some time (about an hour) for the "heat" to blow off but when it did we were left with a nicely balanced Italian with notes of raspberry, cherry and a bit of pepper. Finish was medium in duration. Really delicious with a spicy sausage, pasta dish. An interesting comparison side by side with a pair of '96 Napa wines."

WCC 88 points. 

Bright dark ruby colored, full bodied, moderately complex, concentrated flavorful forward red and dark berry fruits with hints of spice, creosote and leather, finishing with firm structure and a smooth polished tannin backbone.

For a gala tasting with friends TRR and Don K to discuss wine collecting and cellar management planning, and purchasing strategies, I chose half bottles for a more extensive tasting. While the fun of big bottles is evident, its not as widely known or practiced that opening half size bottles offers twice the number of tasting experience options in the same setting.

Opening small format bottles this evening allowed us to taste seven different wines instead of perhaps three had we opened regular or standard size bottles. This allowed a Napa Cabernet tasting as well as a comparison against a similar vintage Bordeaux  and a Australian Shiraz, and a Ice Wine too. It also allowed a comparison of a selection of Napa Valley appellations' terrior and style - Oakville, Mt.Veeder, Howell Mtn, against a blend of those locations, and a Bordeaux blend.

As we most often do, we enjoyed these wines BYOB over dinner at our local neighborhood bistro Angeli's Italian. The big reds were spectacular with their Butternut Squash Gnochi in rich sweet brown sugar and vanilla sauce, and my favorite dish, and off-menu preparation of veal in a rich blue cheese brown sauce on angel hair pasta.

Prior to the red tasting we did an initial tasting at home of artisan cheeses with Cliff Lede Napa Valley Sauvignon Blanc 2007, then a small grilled flank steak taster against the Clark-Claudon and Larmande reds .

Cliff Lede Napa Valley Stags Leap District Sauvignon Blanc 2007

This may be my favorite Sauvignon Blanc. A staple to keep for any wine tasting as a tasty starter, transition wine between courses, or by itself with salad, fruit and cheese or a seafood, light pasta or veggie dish.

While a bit more pricey than average, it stands up against classic Sauvignons costing twice as much. We visited Cliff Lede and did a magnificent tasting there during our Napa Wine Experience 2009.

Lemon colored, medium bodied, nicely balanced acidity, subtle oak, citrus and remarkable peach fruit flavor that turns to lemon with hints of mango, passion fruit and tangerine on the finish. Fabulous complement to lobster with a dash of lemon butter. starter. First tasted at the winery - got some at home - a staple white for the cellar.

Clark Claudon Howell Mountain Napa Valley Cabernet Sauvignon 2004

We've been collecting this Howell Mtn classic since our Napa Valley Wine Experience 1999. We have a vertical collection back to their inaugural 1993 vintage and have tasted this in Napa Cab wine flights with the same outcome as earlier Big Cab tastings - the concensus favorite of the group ...

Deep dark purple - full bodied - explosive aromas of ripe dark berry fruits, big mouth-full of forward complex but polished spicy black and edge of red berry fruits, violets, layers of mocha and oak with a long lingering tannin finish.

The 2004 Napa growing season was condensed with early bud break, warm days, cool nights and one challenging heat spike. The result was a small harvest of intense, flavor packed fruit from an unusual, but exceptional year that is showing and drinking well and should last another decade.

Yates Family Vineyards, Napa Redwood Estates, Aldon Perry Reserve, Napa Valley Mt Veeder Cabernet Sauvignon 2006

This was discovered and acquired during our Napa Valley Mt Veeder Appellaton Experience 2011.

A bit of acid heat initially that soon wears off to a pleasant smooth drinking wine. Deep garnet color - full bodied bursting with complex layers of rich forward black currant, blackberry, ripe sweet black raspberry fruits, tones of cinnamon spice, anise and hints of floral, sweet oak, white pepper and tobacco leaf, finishing with moderate smooth tannins on a rich full finish.

Paradigm Oakville Napa Valley Cabernet Sauvignon 1995

This wine was tasted and acquired during the same Napa Valley Wine Experience 1999  as the Clark Claudon above.

Fragrant, soft supple tannin, medium body, the layers of cherry and black currant fruit are being overtaken by earthy leather, licorice, and herbs, with under-currants of spice and cedar.

Robert Craig Affinity Napa Valley Cabernet Sauvignon 2004

Robert Craig produces this blend of Napa Valley Cabernets from his various vineyard sources on Mt Veeder, Howell Mtn and Napa Valley. He also sources fruit from Mt George and Spring Mtn distict for his wines. He calls Affinity 'three mountains and a valley cabernet'. Its produced for early enjoyment but we continue to find it ages well too. We continue to hold a vertical of this wine dating back to the inaugural 1993 vintage. This wine was a highlight of the evening and was a perfect pairing with the grilled rib-eye steaks, and also went especially well with the the pre-dinner double Gloucester cheese.

Consistent with earlier tasting notes, deep dark purple inky color, huge ripe berry fruit aromatics, full body, ripe berry fruit, accented by a undercurrent of caramel with a hint of anise, tobacco and firm full tannins on the long fruit filled finish.

Château Larmande St Emilion Grand Cru Classe Bordeaux 2005



Château Larmande produces about 9000 cases per year and is known for consistent quality and generally a good value. The estate is planted predominantly in Merlot covering 60% of the vineyard, with 30% Cabernet Franc and just 5% Cabernet Sauvignon making up the balance. 

The 2005 vintage was above average and produced a wine that is already approachable but should last another ten to fifteen years. Bottles are recognizable by the unique lavender colored foil.

Medium bodied, full aromas of floral perfume, moderately complex flavors of red berry and plum fruits accented by subtle spice and hints of cherry-cranberry, nice texture and smooth moderate tannins round out the finish.

D'Arenberg Dead Arm McLaren Vale Valley Shiraz 2002

Dead Arm refers to the (one armed) vines that when afflicted in the early days of the last century were spared from being turned under and emerged to produce highly concentrated fruit from the single remaining arm that survived after the loss of the other side of the vine.

Typically a big fruit forward complex wine, the 2002 was a bit more subdued and muted than its normal big forwardness but what was an off-tone of minerality. Lacking that uber ripe almost raisin-fig with a layer of cedar predominating, this still held that complex black berry fruits with tones of pepper, spice, and cassis and hint of vanilla with a big long bold finish that has a slight tone of tangy cherry.

Linda likes this ripe boldness but its a bit too much to my liking it needs to be tasted with hearty meats, even bar-b-que, or artisan cheeses, such as tonight when it complemented the beef tenderloin, marinated pork tenderloin and then the course of dark chocolate deserts.

Inniskillin Niagara Peninsula VQA Oak Aged Vidal Eiswein 2004


We visited this classic Ice Wine producer during our visit to the Niagara-on-the-Lake isthmus nestled between Buffalo, NY and Toronto. 

The fruit was a bit more muted and subdued than earlier tastings with it giving way to a layer of smoke and wood. Aromas of apple blossoms, apricot with hint of cinnamon-raison bread. On the palate, this beautifully rich dessert wine follows through nicely with mix of apricot, mango and a strong honeyed fig component. The overall finish has good length with tantalizing flashes of exotic fruit and spice.

Paradigm Napa Valley Oakville Cabernet Sauvignon 1994

This is one of the remaining bottles of a case we picked up following our visit to the winery during our Napa Valley Wine Experience back in 1999This is one of the joys of a wine cellar - to conduct periodic comparison tastings over the years to see how a wine ages. We tasted this at home with some artisan cheeses, grilled beef tenderloin, roasted potatoes and grilled asparagus.


Paradigm Napa Valley Oakville Cabernet Sauvignon 1994 - My last tasting notes were a year and half ago on this blog as part of a "diverse-cabernet-bordeaux-blend_tasting" , and previously three years earlier; both notes consistent with this time. 
 
This bottle took an hour to open and shed an initial slight tart cherry edge, which it did. Dark inky color - medium to full bodied. Full forward black cherry and black raspberry fruit flavors starting to show its age a bit with earth and leather emerging over the subtle currant, ripe plum, cedar and a hint of anise on a full firm finish. Earlier notes talk of a milk chocolate layer which was very subtle. I would say the aging of this bottle seemed no more-so than the previous tasting as it is holding its fruit quite well. RM 91 - WS 92.

PlumpJack Winery Napa Valley, Oakville, Estate Cabernet Sauvignon 1997

This was the third vintage of this wine - 100% Estate Cabernet Sauvignon made entirely from grapes grown in the vineyards adjacent to the PlumpJack Winery located on Oakville Cross Road in the Oakville AVA in Napa Valley. We tasted and purchased this wine during winery visits in 1998 and 1999, the first tasting being prior to release from the barrel. We hosted then associate winemaker Mary Pisor at a gala dinner at Meadowood Resort at the base of Howell Mountain in Napa (pictured below). The release notes called for this  wine to age up to fifteen years. Indeed in its fourteenth year it's starting to show its age and is beginning the final stage of its drinking profile. It is still holding its own and is very presentable - not yet diminished in decline, however.

We served this wine at a gala family dinner at home with grilled beef tenderloin and salmon dinner with L, sis Dr Pat, Lauren, Erin & Johnny. Chosen from the cellar commemorating one of the favorite Napa wineries of L, Erin and Johnnie, we gathered on the eve of the mother-daughter 5K run at Montrose Harbor on Chicago's lakefront in which we had four generations represented - Evelyn, Linda, Erin and Lucy, and three generations with Pat, Lauren and Teo. 


Firm, medium to full bodied, the black cherry fruit is a bit subdued overtaken by anise, a layer of spicy oak with hints of nutmeg, dark chocolate, vanilla and a tone of cedar and toasted oak on the finish. RM 89 points.

Diverse Cabernet - Bordeaux Blend Comparison Tasting - Aging Wine

Son Alec's brief visit home from university - spur-of-the-moment (yes, my bride is amazing) celebratory dinner - serving favorite surf & turf - poses wine opportunity/challenge. Go with it and have fun... three diverse aged vintage Cabernet - Cabernet blends to compliment the beef tenderloin and Riesling Spatlese highlights the broiled lobster. 

Paradigm Napa Valley Oakville Cabernet Sauvignon 1994 - - Bought a case of this big Napa Oakville Estate Cabernet Sauvignon following a winery visit during our 1999 Napa Wine Experience.   This is one of the joys of a wine cellar - to conduct periodic comparison tastings over the years to see how a wine ages. (More on that in another unwindwine blogpost). My last tasting notes were three years ago but are totally consistent with this time. Chateau Calon-Ségur Grand Cru Classe St. Estephe Bordeaux 1995 - Had to pull out this Valentine wine - noted as such due to the heart on the label (below) since this turns out to double as our Valentine's dinner too. Once again we have a case of this wine and look forward to periodic tastings in the years to come. Notably reflecting the age-worthiness of this wine (compared to the Napa Cab above), we're only a couple bottles in to this case while only a few bottles remain of the Napa. No signs of age whatsoever here with a long life ahead - Classic Bordeaux with earthy, leathery black berry and black raspberry fruits accented by a long smooth floral finish - this exhibited a bit more fruit and floral the next day at the expense of the firm full but smooth tannin structure. http://cellartracker.com/w?1577  RM 90; WS 96; RP 92


Matthews Cellars Yakima Valley Red Wine 1999 - A Bordeaux mix blend 52% Cabernet Sauvignon, 37% Merlot and 11% Cabernet Franc. Dark inky color - medium - full bodied - spice from the Cab Franc comes through, firm black berry and black raspberry fruits are giving way to a tar, leather, cassis and hint of tobacco as this wine is passing its prime. http://cellartracker.com/w?79548 RM 88.
 
Dr Heidemanns-Bergweiler Bernkasteler Badstube Riesling Spatlese 2006 - Paired with the broiled lobster.

Guenoc, Guenoc Valley Vintage Port 2000 - Paired with cheese cake, fresh strawberry and chocolate fondue dessert. Full bodied - black and deep purple color - taste of brandy, black berry, black raspberry, deep blueberry, dark chocolate, cassis and black cherry, sweetness a nice complement to the dessert - would be great with a stilton cheese - nice close to a great meal. http://cellartracker.com/w?54302 RM 88
