Kansas City Beefsteak at George’s French Bistro and Wine Bar Witchita 

We traveled to Kansas for an extended full weekend of activities including a wedding, visiting several Frank Lloyd Wright sites, and re-shooting an Arts and Crafts architectural site for a collaboration on an upcoming architecture book. 

We traveled to Witchita to visit the Frank Lloyd Wright Allen House, and other properties. While there we dined at George’s French Bistro and Wine Bar located in the College Hill neighborhood, not far from the historic architectural landmark sites. 

It is owned and operated by Chef George Youssef, formerly of Wichita’s Nouvelle Cafe and Uptown Bistro. Originally from Lebanon, Youssef got schooled in French cuisine in Quebec, Canada.

George’s looks and feels like a true Parisian bistro with its decorating and design, indoor and outdoor tables, crisp white table clothes, an open kitchen and gleaming brass-accented bar serving classically prepared bistro dishes served by waitstaff in traditional black vests and ties.



We were seated in the dining room and while we were dining, the bar and dining room started to fill up, and only when we departed, did we see they had opened the front doors to spill out to the patio.  

Normally we might opt for authentic French cuisine at such an establishment, but being in Kansas, we ordered the Kansas City filet of beefsteaks. They pronounce that “We proudly serve Creekstone Farms Premium Black Angus Beef. Our steaks are hand cut and cooked to your satisfaction. Creekstone Farms is famous throughout the world for their rich flavor.”

In French style, the steaks were accompanied by Parisian Potatoes (pomme Frits, fried potatoes), and haricot verts, (green beans). 

Each filet of beef was served with choice of sauces which included BURGUNDY DEMI GLACE - Red wine veal reduction, AU POIVRE - Brandy peppercorn, HOLLANDAISE - Butter, egg yolks, lemon juice, salt, cayenne pepper,  or L’ ENTRECÔTE  - Fresh thyme & thyme flowers, full cream, white anchovies, Dijon mustard, hazelnuts, butter, egg yolks, salt & pepper.

I went simple with the Demi Glace. Linda opted for both the Demi glacé and Au Poivre. Both were excellent.

Our steaks were superb, and the preparations were perfect! 

Readers of these pages know I prefer my beefsteak prepared “Pittsburgh” style … but rather than traditionally rare, I specify ‘hot pink center, Pittsburgh style, or charred slightly”. 

Tonight’s steak was perfect - an object lesson in ideal preparation to my liking!

For a wine accompaniment pairing with our our dinner we ordered WBTG - Wines By The Glass, from the wine list. 

I ordered this Haut Lagarde, because a French Bordeaux Blend is my favorite pairing with beef. Moreover, I used to work with colleague Gary LaGarde, who had a distance ancestral relationship to the French wine producer of the same name.

Winemaker: Maison Raymond

Appellation: A.O.C. Bordeaux

Location: Located in the Saint Laurent du Bois, Entre-Deux-Mers region, not far from the city of Bordeaux. The wines are sourced in the villages of Saint-Laurent-du-Bois, Saint-Martial, and Saint-Felix de Conclude

Dating back to  medieval times, the Raymond family have a long history of producing wine, dating back to 1850. The family property of the domaine du Château de Lagarde has been built up over the years by successive generations.

Varietal(s): 65 % Merlot, 25 % Cabernet Sauvignon, and 10% Cabernet Franc

Ageing: 10% of the wine was aged in oak.

Vineyard Terroir: With close proximity to the Atlantic Ocean, these vines are grown in a mild climate with lots of sunshine, regular rain, and clay-limestone soil, the vines and grapes are grown in the best conditions for Bordeaux varietals.

The wine was reviewed by Wine Enthusiast, Wine Spectator and Decanter. 

Published Tasting Notes: “A core of blackberry and black cherry preserves shows good energy as the flavors move through an anise- and sweet tobacco–tinged finish. Merlot, Cabernet Sauvignon and Cabernet Franc.

In 2000, Lionel Raymond purchased the Château Joumes Fillon organic vineyard. Because of Lionel’s strong beliefs in and respect for the environment and terroir, he decided to convert the whole vineyard (130 hectares) to organic agriculture. Most winemakers in the area thought he was crazy as it is twice the work of a conventional vineyard. Today, they are one of the largest organic wineries in Bordeaux, and part of the exclusive 7% of all wineries of the region who have made the organic commitment.

The Vineyards - The different properties of the domaine benefit from specific conditions: special orientation of the vineyards, composition of the soil, humidity, age of the vines…These conditions are refined during the winemaking allowing them to offer a large range of products. Over 20 people work in the vineyard and the cellars, and consistently looking for innovative techniques in terms of production, vintification with respect for the vines, soil and environment.

Vignobles Raymond produces classic varietals and Bordeaux blends: Sauvignon Blanc, Sémillon, Merlot, Cabernet Sauvignon, Cabernet Franc and Malbec. Another label, Le Petit du Château de Lagarde is 100% Merlot. 

This provided great QPR and was a wonderful pairing with the dinner. It was carefully selected for the winelist. 

Garnet colored, medium to full bodied, pleasant easy drinking, round flavorful complex black berry and black currant fruits with notes of black tea, tobacco, anise and spice. 

RM 88 points. 

For Linda, and her pairing with the filet of beef, we selected a Southern Rhône River Valley “GSM” (Grenache, Syrah, Mourvèdre) Red Blend. 

Cellier Des Dauphines Reserve Côtes du Rhône Grenache Syrah 2021

Another carefully selected, high QPR, pleasant easy drinking wine. 

This is produced by the Cellier des Dauphins, a collective, group of winegrowers called “Union des Vignerons des Côtes du Rhône” which is a collaboration since 1967 of 2000 winegrower families of the southern Rhone Valley. With 12 000 hectares of vines, and around twenty appellations, Cellier des Dauphins has become the leading wine producer in the Rhone Valley in less than 50 years.

Cellier des Dauphins has become one of France’s benchmark Rhône brands. Cellier des Dauphins is now the first producer of Organic wines in the Rhône Valley founded to serve a devotion to the protection the environment. 


This is a blend of Rhône varietals - 60% Grenache and 40% Syrah.

Winemaker Notes - “This wine displays a deep red hue with ruby tints and notes of sun-ripened black fruit on the nose. The palate offers a velvety texture and spicy notes underpinned by ripe black fruit, blackcurrants and black cherries. A more modern take on the traditional Côtes du Rhône style, this wine combines structure, freshness and smooth tannins. It has a seductively elegant, intense and long-lingering finish.”


Dark ruby/garnet colored, light medium bodied, tightly wound, structured complex black fruits with notes of black tea, spice, hints of black pepper and lavender notes on a pronounced lingering tannin laced acidic finish.

Duo Mt Veeder Pym Rae Vineyard Napa Cabs

Fellow Pour Boy wine buddy Bill and Beth came in from Charleston for the weekend so Linda prepared grilled rib-eye beefsteaks with roasted potatoes and haricut verts. Linda prepared the steaks charred Pittsburgh style perfectly, as shown. 

Prior to dinner and ceasar salad we had a selection of artisan cheeses and fresh berries.

After dinner, Linda served Tuxedo chocolate cake with fresh berries and whipped cream.

We scoured the cellar for an interesting and tasty wine flight and selected a mini-horizontal of two vintage wines from two different producers, sourced from the same estate and vineyard.

We've met with Robert Craig a dozen times over the years at the winery, at a ghost winery in early years, at harvest parties, and at special dinners that we have hosted or attended.  

The Pym Rae vineyard property historically was better known as the Napa Valley vineyard and estate of Robin Williams, the comedian and actor known for his stand-up routines and his many diverse film performances including Mrs Doubtfire and Good Will Hunting, for which he won an Academy Award.

The name Pym-Rae is a hommage to the late Robin Williams and his children after whom the vineyard was named. The inspiration behind the odd sounding Pym-Rae was the combination of the middle names of Robin's two eldest children, Zachary Pym Williams and Zelda Rae Williams.
 
The Pym-Rae vineyard was originally cultivated in about 1990, long before there was an estate chateau or active winery. The grapes were sold to various local producers including Robert Craig, Vineyard 29 and Rombauer. 
 
Robert Craig was winemaker for Robin Williams wines for more than a dozen years and when he started producing wines under his own label he sourced his Mt Veeder Cabernet Sauvignon grapes from there. We hold several decades of vintages of Robert Craig wines including this Mt Veeder label, dating back to the inaugural release in 1993.

Robert Craig's website noted the end of their supply of fruit from this vineyard; "Bob Craig consulted on the development of the late Robin Williams’ 17-acre Pym Rae vineyard in 1990 and, since then, we (have) received the majority of the fruit from this terrific property".

The entire Pym-Rae property totaled 640 acres and was purchased by Robin Williams in 1994. After his death, in August, 2014, the property was sold in January 2016 to the French Tesseron family, owners of Chateau Pontet-Canet and Tesseron Cognac. 
 
As part of the purchase they acquired homestead chateau on the property, Villa Sorriso, a massive, stunningly beautiful home, built in 2003. The 2 story Italian styled villa, 20,000 square feet, was the home of Robin Williams and included a movie theater, 5 bedrooms, 10 bathrooms, a tennis court and infinity pool in the home. Robin Williams had referred to the estate as Villa Sorriso, which is translated to “Villa of Smiles.” There the Tesserons have created the "Tesseron Estate". 
 
Last year the Tesseron Pym Rae Cabernet Sauvignon was released at $350 per bottle making these wines a terrific value in comparison.  

Marco Di Giulio Napa Valley Mt Veeder Pym Rae Vineyard Cabernet Sauvignon 2005

This 2005 Mt. Veeder Pym-Rae Cabernet was dark inky blackish garnet colored, full bodied, powerful and massively structured. Upon opening the fruit flavored exploded from the bottle into the glass. The forward rich fruits are layered with blackberry and blueberry accented by a tone of chocolate with nuances of smoke and spice, turning to an incredibly long finish.

I wish I could find more of this label and will watch for it and buy all that I can find. Watch for the new releases from Tesseron Estate as they come on the market in the coming years.

An interesting comparison of two wines from two different winemakers and producers, sourced from the same fruits. In comparison, the Di Giulio was more expressive with more vibrant fruits from the onset with aromas erupting from the bottle and glass upon opening and pouring, while the Craig was tighter and more subdued. 

Over the course of an hour the wines came closer together resembling their common terroir character and profile. Then, they drifted apart again, back to their initial profile where they revealed winemaker influences as the Di Guilo presented more vibrant fruits accented by a frame of sweet oak. 

Surprisingly, the ladies both preferred the Robert Craig over the bolder more expressive Di Giulio.

Robert Craig Napa Valley Mt Veeder Cabernet Sauvignon 2005

The time before last that we served this particular label at one of our wine dinners, it was poignant tasting and reminiscing over this wine. We recalled tasting this wine with Robert Craig on numerous occasions and he recollecting this is his favorite of the vineyard selections. We talked of the recent end of the supplier relationship for this fruit source as the legendary Pym Rae Vineyard, previously owned by the late Robin Williams, was sold to a major French producer who acquired the sixteen hundred acre estate with plans to enter the Napa Valley marketplace. We recall Robert's reminiscences of Robin for whom he worked and managed the vineyards back in the nineties. 

From Robert we learned the inspiration for naming Robin's wine portfolio brand Toad Hollow was because, as a child he couldn't pronounce older brother Todd's name.

Robert Craig's 2005 Cabernet Sauvignon is complex and unusually high in alcohol. It displays aromas of blackberry and cassis with notes of chocolate and tobacco, while its fruit-forward palate offers flavors of mocha and licorice with a long finish and supple tannins.

Its dark garnet colored, black berry fruits with notes of smoke, hints of cassis, toasty oak, graphite, and spice notes offered in a medium-bodied, elegant, Margaux-like stylish, graceful wine. Drink it over the next decade."

Mt. Veeder, located on the eastern slopes of the Mayacamas range has a climate that is cooler than the valley floor below. This climate and the more difficult (less fertile) volcanic mountain soil influence the flavors of the wines from this region. Most known for both Chardonnay and Cabernet Sauvignon, Mt. Veeder is known for producing grapes of exceptional character and intensity.

Dark garnet colored, medium bodied, complex aromatic blackberry and black cherry fruits with notes of cassis, subtle spice, black tea, cigar box with hints of cedar and anise with full, ripe tannins and a hint of minerality on a long smooth finish.

Clerc Milon Pauillac 1989 

With the steak dinner entrees course we opened this aged vintage Bordeaux from Bill and Beth's son Matt's birthyear that we've been holding for such an occasion.  

The 1989 Clerc-Milon is 65% Cabernet Sauvignon, 25% Merlot, and 10% Cabernet Franc. The vintage faced a warm spring that produced early flowering and the heat continued throughout the summer, leading to Clerc-Milon's earliest harvest of the twentieth century to that point. 

We drove past the Clerc Milon estate and vineyards during our Bordeaux Wine Experience in 2018, although we didn't stop as our focus for the trip the adjacent St Julien appellation. 

This wine was rated 93 points by Wine Spectator, 91 points by Vinous and 90 points by Robert Parker's Wine Advocate. 

At thirty-two years, this was holding up well, testament to the ageworthiness of fine Bordeaux from a good vintage. The fill level was appropriate for the age at lower neck level. The cork was completely saturated by still sound and intact albeit nearing end of life for its utility. It was extracted after much effort and care using a ahso two pronged cork puller. I wonder if it could have been done with a corkscrew. 

This was clearly in the waning years of its drinking window, but still presentable and enjoyable, taking into account its into its entering its fourth decade. The resulting Clerc-Milon was on par with the premier first growth flagship Mouton-Rothschild and even preferred by Robert Parker for the first time in his many years as a critic resulting a great value in comparison

Garnet colored with a slight brownish hue starting to emerge, medium bodied, the ripe blackberry and black currant fruits were beginning to give way to earthy leather, creosote, tea, herbs and hints of licorice and graphite. turning to soft tannins on the long lingering finish.

Long Shadows Pedestal Merlot 2015

Son Alec flew in from NYC to attend son Sean's, his brother's bachelor party and we celebrated the reunion with a hearty grilled beefsteak dinner including tomahawk rib-eye steaks. We selected from the cellar this Long Shadows Pedestal crafted by legendary winemaker Michel Rolland for the occasion. 

 Linda prepared beefsteaks prepared in our favorite Pittsburgh-style (charred with hot pink center) with baked potatoes, haricot verts, sweet corn and an iceberg wedge salad with fresh tomatoes and blue cheese. I must say this is a classic midwest summer dinner. During the years that we lived in Silicon Valley, California, I missed good steak, sweet corn and beefy sweet tomatoes! I often say, California (in this case, Washington State) do the grapes, and Indiana/Illinois the beef, corn and tomatoes!

Alec turned us on to the Michel Rolland own-label crafted from fruits from the notable Tokalon Vineyard in Napa Valley - (source for many ultra-premium labels including Opus). He had that wine with soon-to-be father-in-law Frank B. We researched the label and picked up a highly allocated three pack which I shared with fellow Pour Boy Dr Dan, and son Ryan for their cellars. We'll look forward to indulging in that super-premium label. 

Long Shadows Vintners' Collection 

I have written in these pages about Long Shadows, the brand portfolio of several labels, all crafted by world famous winemakers from fruits sourced in the Washington State Columbia Valley. This was the vision of Allen Shoup, former CEO of Chateau St Michelle, champion and evangelist for Washington State wines. He formed the brand and recruited a world famous winemaker for each varietal based label. Michel Rolland, Pomerol vintner and consultant to many of the world’s top wineries, was selected to produce this Right Bank Bordeaux Blend wine. He is the 'Master of Merlot', winemaker to some of the leading Bordeaux labels from the Right Bank where Merlot is the predominant varietal in the blend as well as the Napa based Merlot based Red Blend release cited herein. 

We've long known about the brand and joined their club while visiting their tasting room hospitality center in Woodinville WA during our Seattle Wine / Dine Experience in 2018. We remain Vault Club Members of the allocated portfolio and get a case each quarter of two of the varietal based selections including this Pedestal label.

Long Shadows Pedestal Red Blend (Merlot) 2015

The blend is a Right Bank Bordeaux composition, 75% Merlot, 15% Cabernet Sauvignon,  8% Petit Verdot and 2% Cabernet Franc.  The production was 2,365 cases. 

The grapes for the 2015 Pedestal were sourced from several top, notable Columbia Valley vineyards, the Wahluke Slope’s Weinbau and Stone Tree Vineyards dominate the blend and give Pedestal its aromatics, bright fruit, texture and fine tannins. Conner Lee Vineyard adds richness, and Dionysus Vineyard grapes build complexity in the wine.

The winemaker's notes for this release sum it up perfectly: "The 2015 Pedestal offers vibrant aromas of black cherry and ripe blackberries with accents of vanilla and freshly roasted coffee. Expressive and lively on entry, with a richly textured mid-palate and layers of huckleberry, bittersweet chocolate and oak spice that stretch across a lengthy finish." 

I note that at five years, this is still early in its tasting window and should continue to age gracefully for a few more years to integrate more and gain more balance and lose some of its still youthful astringency. It is dark inky garnet colored, medium full bodied, strong aromatics erupt from the bottle upon releasing the cork, bright tangy astringent black berry fruits with sprites of bittersweet dark mocha chocolate, spicy oak and notes of vanilla tobacco and expresso on the lengthy soft tannin finish.
